Diabetic foods: do they really exist?
What's a diabetic food anyway?
Strictly speaking, there's no such thing as a "diabetic food." Food is just food.
But you'll notice foods which improve the blood sugar more rapidly compared to others, those with a very high glycemic index. When these nuts are consumed, the normal pancreas would answer with a rise of insulin, keeping blood sugars below aproximatelly 160 mg/dL. In the diabetic, the pancreas can't or perhaps does not produce adequate insulin fast enough to properly handle glucose concentrations. Additionally, in Type II diabetics, the cells of the body that use glucose for metabolic energy cannot absorb the additional glucose as quickly as it's produced.
Food items that usually increase the blood glucose quicker than diabetics are able to metabolize it include: sugar, alcoholic beverages, high-fructose corn syrup, fructose (fruit sugar) (in some folks), pasta, white potatoes, white rice, white bread, along with other simple carbs & starches.
